Applesauce

What says fall like applesauce?  I really like applesauce.  Not the Motts kind, although I used to love that, but real homemade applesauce.  I made some this week and gloried in crisp taste of fall.


Chunky Applesauce Recipe (serves 4-6)
4 Fuji, Braeburn or Gala apples 
1/4 cup of sugar
2 tsp lemon juice
pinch of kosher salt

 Peel, quarter and core each apple, and cut them into chunks.  Place in a saucepan, add the sugar, 1/4 cup of water, lemon juice, salt and stir well.  Bring to a boil over medium-high heat, reduce the heat to love, cover, and simmer until tender, about 30 minutes.  If the apples begin to dry out before they are ready, add a little more water.  

Uncover the pan and mash the apples lightly with a wooden spoon or silicone spatula.  Continue to cook for 5 minutes longer to evaporate some of the excess moisture.  The applesauce should be thick.  Remove from the heat, sprinkle with cinnamon and serve warm or chilled.

I really love this amazing cookbook.  I want to make almost everything in here! Homemade donuts, butternut squash pasta, orange cream popsicles and lots of other amazing recipes.  Beautiful pictures, too!  I found it at our local library and I love checking this gem out!
